Jimmy Johns celebrated their grand opening on Thursday. They are located at 235 East Main St in the newly remodeled Weaver Main Street Center.  Jimmy Jones is known for their "freaky fast" delivery service and great subs.  It is always great to see a new restuarant in town and especially one that took the time to totally remodel the whole building.  Good luck to co-owner Sam Rinella and everyone at Jimmy Johns.

Restaurant Review of Spudos Doughnut and More

If you are not aware of it yet, we have a new restaurant that opened in Galesburg called “Spudos Donuts”.  Yes, I know you are thinking ‘it’s just another Doughnut shop’, but you are mistaken.  First of all, their doughnuts are made from a potato-based recipe which contains no animal fat, no trans fat, are low in sodium and have 30 percent fewer calories than traditional doughnuts.  So, we can have a doughnut once and a while and not feel as if we have blown our diet.  What makes it even greater is the fact that they serve other foods, including a whole lunch menu.
We stopped in yesterday for lunch.  I had the BBQ Pulled Pork basket.  It was scrumptious!  The sandwich nearly melted in my mouth and besides the sticky residue of barbeque sauce on my hands (which they warn is a little messy on the menu), there wasn’t a morsel left over.  Equally pleasing was the friendliness of the employees.  They were polite, happy and ready to help you with anything you need.  It is so refreshing to go into a place of business where everyone there is happy, because happy people wear off on those around them.  So, you not only walk out of Spudos with a full tummy, but a positive outlook because of all the nice people that work there as well. 
So, if you get a chance to get out, be sure to stop by Spudos for a bite to eat and good company to talk to – you will not be disappointed.

Garlic Mashed Potatoes

New! Italian Chicken & Pasta Salad* 
6 servings
Preparation: 10 min.  
Cooking: 10 min.  
Total: 20 min.


3/4 lb mostaccioli pasta, or small tube pasta
3/4 lb packaged cooked chicken strips
2 tomatoes, peeled and chopped
1 zucchini, trimmed and thinly sliced
3 oz large pitted olives, pitted and sliced
1/3 cup scallions, chopped
1/3 cup tarragon wine vinegar
1/4 cup Carlini olive oil
2 tsp basil, or 2 normal fresh, minced
1-1/2 tsp salt (optional)
1/2 tsp dry mustard
1/4 tsp pepper
1 clove garlic, crushed
Cook pasta in boiling salted water about 8-10 minutes, or until al dente. Drain and transfer to a salad bowl. Add next 5 ingredients to pasta. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over salad and toss. Let sit 30 minutes for flavors to meld.

New! Honey Baked Chicken*

1/2 cup all-purpose flour
1/2 tsp pepper
3 lb chicken pieces
1/4 cup unsalted butter, melted
1/4 cup honey
1/4 cup lemon juice, from concentrate
1 tbsp soy sauce
Preheat oven to 350°F. Combine flour and pepper in a shallow bowl. Use to coat chicken pieces. Pour 2 Tbsp butter into a 9x13 in. baking dish. Place chicken in dish and turn to coat with butter. Leave skin side down and bake uncovered 30 minutes. Turn chicken. Combine honey, lemon juice and soy sauce with the remaining butter. Pour over chicken. Bake 30 minutes more, basting often with honey sauce.

2 large eggs
3 bananas, mashed thoroughly
1 tsp vanilla extract
3/4 cup granulated sugar
2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1/2 cup chopped walnuts
1/4 cup semisweet chocolate chips
Preheat oven to 350°F. Using an electric mixer or food processor, combine eggs, bananas and vanilla. Add next 4 ingredients and mix thoroughly. Add nuts and chocolate chips and mix again. Pour into a buttered loaf pan and bake 1 hour.

New! American Crab Cakes 
4 servings
Preparation: 10 min.  
Cooking: 10 min.  
Total: 20 min. 

1 lb crab meat, or imitation crabmeat, chopped
1-1/2 cups fresh soft breadcrumbs
1/4 cup mayonnaise
2 tbsp parsley
1 tbsp onion powder
1 tbsp fresh thyme
1 tsp dry mustard
1/2 tsp ground ginger
1/4 cup olive oil
Combine all ingredients except the olive oil. Form into cakes about .5 in. thick. Add olive oil to heavy skillet. Add cakes and fry in batches over medium heat for about 3-5 minutes per side, or until golden brown.

Stuffed Green Peppers

Serves 6

Ingredients

  • 6 green bell peppers
  • salt to taste
  • 1 pound ground beef
  • 1/3 cup chopped onion
  • salt and pepper to taste
  • 1 (14.5 ounce) can whole peeled tomatoes, chopped
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup uncooked rice
  • 1/2 cup water
  • 1 cup shredded Cheddar cheese
  • 2 (10.75 ounce) cans condensed tomato soup
  • water as needed

Cooking Instructions

Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.

In a large skillet, sauté beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.

Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.

Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.

Spanish Braised Chicken with Green Olives and Rice

Ingredients:

  • 2 pounds bone-in skinless chicken thighs
  • 1 teaspoon paprika
  • Nonstick cooking spray
  • 3/4 cup dry sherry
  • 2-1/4 cups water
  • 1 can (about 14 ounces) fat-free reduced-sodium chicken broth
  • 3/4 cup sliced pimiento-stuffed green olives
  • 1-1/2 teaspoons dried sage
  • 1-1/2 cups uncooked long-grain white rice

Cooking Instructions

1. Sprinkle chicken thighs with paprika. Spray large nonstick skillet with cooking spray; heat over medium-high heat. Brown chicken 3 to 4 minutes on each side or until golden.

 

2. Remove chicken from skillet. Add sherry stirring to scrape up bits from bottom of skillet. Add water, chicken broth, olives and sage; bring to a boil. Reduce heat to low. Return chicken to skillet. Cover; simmer 10 minutes.

3. Add rice to liquid around chicken; gently stir to distribute evenly in skillet. Cover; simmer 20 to 25 minutes or until liquid is absorbed and rice is tender.

 

Southern Fried Chicken

Serves 4-6
Ingredients
  • 1 (3 pound) whole chicken, cut into pieces
  • 1 cup all-purpose flour
  • salt to taste
  • ground black pepper to taste
  • 1 teaspoon paprika
  • 1 quart vegetable oil for frying

Cooking Instructions

Season chicken pieces with salt, pepper, and paprika. Roll in flour.

Add 1/2 to 3/4 inch oil to a large, heavy skillet. Heat to approximately 365 degrees F (185 degrees C). Place chicken pieces in hot oil. Cover, and fry until golden, turning once. Drain on paper towels.

Wild Rice Chicken

Serves 4
Ingredients

  • 2 (6 ounce) packages uncooked long grain and wild rice
  • 2 cups cooked, cubed chicken breast meat
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (4 ounce) jar diced pimento peppers, drained
  • 1 onion
  • 1 cup shredded Cheddar cheese, divided

Cooking Instructions

Preheat oven to 300 degrees F (150 degrees C). Prepare rice according to package directions.

In a medium bowl, toss together the cooked chicken, prepared rice, soup, pimientos, and onion. Transfer to a lightly greased 9x13 inch baking dish. Stir in 1/2 cup of the cheese, then sprinkle the other 1/2 cup of cheese on top.

Place in preheated oven briefly, to melt.

Stromboli

Serves 4
Ingredients

  • 1 (10 ounce) package pizza crust dough
  • 1/2 pound lean ground beef
  • 1 cup cooked ham, diced
  • 1 green bell pepper, chopped
  • 1 red onion, finely chopped
  • 1 (14 ounce) jar pizza sauce
  • 1 (4.5 ounce) can mushrooms, drained
  • 1/4 cup butter, melted
  • 1 (8 ounce) package sliced pepperoni sausage
  • 1 cup shredded mozzarella cheese

Cooking Instructions

Preheat oven to 400 degrees F (200 degrees C).

In a skillet over medium heat, brown the ground beef until no pink shows; drain. Mix in the ham, bell pepper, onions, pizza sauce and mushrooms.

Lay pizza dough flat on cookie sheet. Distribute pepperoni slices over dough. Place a heaping pile of the sauce mixture on one side of dough (some may be left over). Sprinkle with mozzarella cheese. Fold dough over and pinch ends and sides together. Poke holes in the top and brush melted butter on it.

Cook in a preheated oven for 30 minutes or until golden brown. Slice into individual sections to serve.


Better Than Sex Cake

Ingredients
  • 1 (18.25 ounce) package devil's food cake mix
  • 1/2 (14 ounce) can sweetened condensed milk
  • 6 ounces caramel ice cream topping
  • 3 (1.4 ounce) bars chocolate covered toffee, chopped
  • 1 (8 ounce) container frozen whipped topping, thawed

Cooking Instructions

Bake cake according to package directions for a 9x13 inch pan; cool on wire rack for 5 minutes. Make slits across the top of the cake, making sure not to go through to the bottom.

In a saucepan over low heat, combine sweetened condensed milk and caramel topping, stirring until smooth and blended. Slowly pour the warm topping mixture over the top of the warm cake, letting it sink into the slits; then sprinkle the crushed chocolate toffee bars liberally across the entire cake while still warm. (Hint: I crush my candy bars into small chunks as opposed to crumbs - I like to have pieces I can chew on!)

Let cake cool completely, then top with whipped topping. Decorate the top of the cake with some more chocolate toffee bar chunks and swirls of caramel topping. Refrigerate and serve right from the pan!

Creamy Cinnamon
Ice Cream

Ingredients

  • 4 cups milk  
  • 1 small piece lemon zest
  • 1 small cinnamon stick
  • 6 egg yolks
  • 1 1/2 cups sugar

Preparation:

Heat half the milk in a pan with the lemon zest and cinnamon. Remove from the heat. Beat the yolks with the other half of the milk and mix in the sugar. Add to the pan and heat again until the milk thickens, but do not allow to boil. Stir continuously with a wooden spoon. Remove the lemon zest and cinnamon stick. Allow to cool, then chill in the freezer until smooth and creamy.
